Et quand le caramel s&rsquo;en m\u00eale, comment dire&#8230;<\/p>\n<p>Pour la base de cet entremets, j&rsquo;ai r\u00e9alis\u00e9 un biscuit moelleux au cacao (g\u00e9noise), l\u00e9g\u00e8rement imbib\u00e9 d&rsquo;un sirop tr\u00e8s tr\u00e8s tr\u00e8s vanill\u00e9 ! Pour la g\u00e9noise, pas de chichi: 30 g de farine et 30 g de sucre par oeuf entier, et pas de cuisson au bain-marie: je fais blanchir, monter et doubler de volume les oeufs avec le sucre dans la cuve du robot, au fouet et \u00e0 vitesse maximum, puis j&rsquo;incorpore d\u00e9licatement la farine \u00e0 la maryse.<\/p>\n<p>Le croquant est apport\u00e9 par un croustillant feuillantine inspiration passion: une masse de chocolat fondu pour une masse de pralin\u00e9 pour une masse de feuillantine.<\/p>\n<p>Une pur\u00e9e mangue-passion, tr\u00e8s fruit\u00e9e, \u00e0 peine sucr\u00e9e et acidul\u00e9e \u00e0 souhait est ins\u00e9r\u00e9e dans une mousse au chocolat au lait caram\u00e9lis\u00e9.
