Mais le caramel exotique, au bon go\u00fbt de fruit, avec les grains de vanille qui croustillent sous la dent, c&rsquo;est divin &#8230; n&rsquo;ayons pas peur des mots !<\/p>\n<p>Il nappe, il garnit, il parfume, il sublime&#8230;<\/p>\n<p>Pour mes sauces caramel, je r\u00e9alise toujours un caramel \u00e0 sec. Je ma\u00eetrise davantage sa coloration, et je trouve le go\u00fbt bien plus fin. D&rsquo;aucuns disent qu&rsquo;il ne faut surtout pas remuer le caramel en cours de cuisson, et qu&rsquo;il se \u00ab\u00a0berce\u00a0\u00bb. Personnellement, je m\u00e9lange du d\u00e9but \u00e0 la fin ! Je verse un peu de sucre dans la casserole, je fais chauffer \u00e0 feu moyen. D\u00e8s que le sucre fond et prend une jolie couleur, je m\u00e9lange \u00e0 la spatule exoglass et ajoute le sucre au fur et \u00e0 mesure.
