Incorporer la levure au fouet. Ajouter les farines, puis le sel, le sucre et l&rsquo;oeuf entier. M\u00e9langer \u00e0 l&rsquo;aide du p\u00e9trin \u00e0 la premi\u00e8re vitesse du robot, pendant 4 minutes, jusqu&rsquo;\u00e0 obtenir une p\u00e2te homog\u00e8ne. Incorporer ensuite la petite quantit\u00e9 de beurre pommade, et m\u00e9langer jusqu&rsquo;\u00e0 ce que la p\u00e2te se d\u00e9colle de la cuve et forme un r\u00e9seau glutineux (15 \u00e0 20 minutes) .<\/p>\n\n\n\n<p>filmer au contact et r\u00e9server une nuit au frais.<\/p>\n\n\n\n<p>Etaler la grande quantit\u00e9 de beurre en carr\u00e9 et sur 5 mm d&rsquo;\u00e9paisseur.<\/p>\n\n\n\n<p>Abaisser la p\u00e2te,  2 fois plus grand que le beurre.<\/p>\n\n\n\n<p>D\u00e9poser le beurre au centre de la p\u00e2te. Rabattre chaque c\u00f4t\u00e9 de la p\u00e2te sur le beurre.<\/p>\n\n\n\n<p>Proc\u00e9der au premier tour simple: \u00e9taler le p\u00e2ton en long, jusqu&rsquo;\u00e0 trois fois sa largeur. Plier le tiers sup\u00e9rieur jusqu&rsquo;au deux tiers. Replier le tiers inf\u00e9rieur par dessus. Effectuer un quart de tour vers la droite. Filmer au contact. Laisser reposer 30 minutes au frais.
