Toujours est-il que cet entremets se compose d&rsquo;un biscuit joconde, d&rsquo;un croustillant au pralin\u00e9, d&rsquo;une mousse au chocolat lact\u00e9 caram\u00e9lis\u00e9, d&rsquo;un cr\u00e9meux au chocolat noir et tonka et d&rsquo;une couche de caramel \u00e0 la fleur de sel. Il est recouvert d&rsquo;un gla\u00e7age \u00e0 la cr\u00e8me de caramel, au bon go\u00fbt de cr\u00e8me de caramel. Si vous n&rsquo;aimez pas le caramel, la cr\u00e8me, le chocolat&#8230; <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55-1024x768.png\" alt=\"\" class=\"wp-image-724\" srcset=\"https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55-1024x768.png 1024w, https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55-600x450.png 600w, https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55-300x225.png 300w, https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55-768x576.png 768w, https:\/\/vanille-et-citron.fr\/wp-content\/uploads\/2021\/01\/Capture-d\u2019\u00e9cran-2021-01-16-\u00e0-18.48.55.png 1146w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Voici les proportions que j&rsquo;ai utilis\u00e9es, de m\u00e9moire (QSP un entremets de 20 cm): <\/p>\n\n\n\n<p>Biscuit joconde: l&rsquo;appareil est r\u00e9alis\u00e9 avec 2 oeufs entiers, 70 g de sucre glace, 70 g de poudre d&rsquo;amandes torr\u00e9fi\u00e9e, 15 g de beurre fondu refroidi et  20 g de farine, auquel on ajoute une meringue fran\u00e7aise avec 90 g de blancs d&rsquo;oeuf et 30 g de sucre semoule. <\/p>\n\n\n\n<p>Croustillant: 20 g de chocolat au lait caram\u00e9lis\u00e9 fondu, m\u00e9lang\u00e9 \u00e0 60 g de pralin\u00e9 puis 40 g de cr\u00eapes gavotte \u00e9miett\u00e9es. <\/p>\n\n\n\n<p>Cr\u00e9meux: on r\u00e9alise une cr\u00e8me anglaise avec 3 jaunes d&rsquo;oeufs, 100 g de lait entier infus\u00e9 \u00e0 la f\u00e8ve de tonka et 100 g de cr\u00e8me liquide enti\u00e8re, \u00e0 laquelle on ajoute 125 g de chocolat noir \u00e0 70% de cacao. <\/p>\n\n\n\n<p>Mousse bavaroise: on r\u00e9alise aussi une cr\u00e8me anglaise  avec 200g de lait entier, 3 jaunes d&rsquo;oeufs, \u00e0 laquelle on ajoute 4 g de g\u00e9latine 200 bloom, 150 g de chocolat lact\u00e9 caram\u00e9lis\u00e9 et  200 g de cr\u00e8me liquide enti\u00e8re mont\u00e9e mousseuse.<\/p>\n\n\n\n<p>Caramel \u00e0 la fleur de sel: il est cuit \u00e0 sec, avec 200 g de sucre, et d\u00e9cuit avec 100 g de cr\u00e8me liquide enti\u00e8re, auquel on ajoute 30 g de beurre et 2 pinc\u00e9es de fleur de sel.<\/p>\n\n\n\n<p>Gla\u00e7age caramel: 250 g de sucre, 250 g de cr\u00e8me liquide enti\u00e8re, 10 g de g\u00e9latine 200 bloom.
